Food For Thought Friday: No-Bake Energy Bites


I’ll be the first to admit it: I’m not a chef or a food photographer. That’s why recipes on my blog will almost always be someone else’s and the photo will be as well (I will always give photo credit). That doesn’t mean I’m not a huge good food sharer who loves to spread the word about delicious recipes.

Food For Thought Friday will be a weekly feature on this blog including recipes that can easily be used to feed a writer’s brain.

This week’s recipe: No-Bake Energy Bites

I found this recipe (and photo) on Smashed Peas and Carrots and I make them all the time. The bites are an easy, healthy snack; perfect for munching on while you’re working hard on your latest manuscript.

1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Mix everything above in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.
